SNOWDON STEAM PUDDING
This is our take on the famous Snowdon Pudding which was first written down by a certain Eliza Acton in 1845. Although there is a bit of disagreement over exactly who created it. Alice Corbett in 1887 also has a strong claim.
It was served to walkers and climbers after they returned from a day on the mountains. This recipe has a few personal additions.
Ingredients:
4oz Raisins
1 oz Glace Cherries
4 oz Beef Suet
4 oz Brown Bread Crumbs
1 oz Ground Rice
4 oz Castor Sugar
2 Eggs
2 Tablespons of Marmalade
2 Tablespoons water
Rind of a lemon
Method:
Beat or whisk the eggs, marmalade and water. Add the dry ingredients and mix well. Keep the mix on the wet side. Place into a bowl and cover with grease proof paper or foil.Steam for 2 – 2 ½ hours.
This is such a simple pudding to make and it’s definitely worth the effort. Serve with custard or rum sauce.
